I did not jump in and loved eating more Vegetables and Fruit. It grew on me over time.... Here is a combination of recipes Vegetable, Fruit and Whole Grain based. Great for embarking on the Daniels Fast or just wanting to go more Vegetarian, Detox or just eating more Healthy and Whole foods. These recipes are gathered from many places, friends, books and some even put together by me in desperation to eat something tasty and healthy. Please feel free to comment and give feedback.

FALAFEL - CHICKPEA PATTIES
This is a Middle Eastern treat!
4 cups cooked chickpeas mashed,
4 cloves garlic crushed,
2t ground cumin,
1t turmeric,
1t salt,
half a cup grated onion,
1/4 cup minced parsley,
1/4 to half cup water,
1T lemon juice,
pinch of cayenne pepper,
1/3 cup flour,
-Mix all the ingredients together and form into medium size patties.
-You can fry them in olive oil which could be a trick as they break, or just pack them out on a greased baking sheet and bake in the oven until brown.
-Serve with sliced tomatoes, cucumber stuffed in pittas or rolled up in whole wheat wraps.
