I did not jump in and loved eating more Vegetables and Fruit. It grew on me over time.... Here is a combination of recipes Vegetable, Fruit and Whole Grain based. Great for embarking on the Daniels Fast or just wanting to go more Vegetarian, Detox or just eating more Healthy and Whole foods. These recipes are gathered from many places, friends, books and some even put together by me in desperation to eat something tasty and healthy. Please feel free to comment and give feedback.

EGGPLANT ROLLUPS
Peel 2 large eggplants, slice in thin strips. Sprinkle with salt and let it sit for a few minutes. Rinse off.
1 pepper diced,
1 onion chopped,
2 cloves garlic minced,
salt and pepper to taste
2 cups tomato sauce.
-Lay the eggplant strips on a greased cookie sheet and bake in the oven until soft.
-Saute pepper, onion and garlic in a bit of olive oil.
-Spread a tablespoon of the mixture onto an eggplant strip and roll up.
-Pack them in an oven dish closely together.
-Throw the tomato sauce over and bake for 30min at 180dC.
